Juval viticulture 2021
The winter of 2020/2021 brought an unusually abundant snow cover to the Juval mountain, which provided our soils and vines with moisture until spring. The summer weather was somewhat changeable, but often the temperature exceeded 30 degrees Celsius during the day. A marked cooling of the weather in late summer then slowed down the ripening and the reduction of acidity in the grapes. Therefore, we harvested them at full ripeness from the end of September with a favourable acidity, which gives the wines of the year 21 a very fine and fruity character. At the moment, all young wines are still on their own fine yeast, which we keep in suspension with gentle and periodical movements in order to protect the wine and release valuable yeast ingredients into it.
In 2022, three new wines will enrich our wine list -
... Pinot Bianco Himmelsleiter – english “stairway to heaven” - is a selection of the ripest grapes from older Pinot Bianco vines in the highest vineyards of our estate. After fermentation and maturation in large wooden barrels as well as one year of ageing in the bottle, this wine is now particularly expressive, vibrant mineral and creamy.
... Duett - our sparkling wine, which is produced by classical bottle fermentation and matures for 36 months in the mountain at a constant temperature of 7 to 8 °C before it is disgorged before Christmas. Duett stands for the two grape varieties Riesling and Pinot Noir, but also for two winegrowers Castel Juval and Lehengut - our neighbouring winery in Castelbello, who enjoy producing a sparkling wine of the highest class together. Let yourself be carried away by its racy, challenging nature and the persistent taste;
... KorMela - our cornelian cherry cider, made from our own fruit by bottle fermentation with our friends Franz Egger and Theolinde Völser. In contrast to classical bottle fermentation, in our cider the yeast remains in the bottle, which means that it does not require the addition of sulfites. In addition, the fruity character of apples and cornel cherries is enriched by a fine yeast note. We recommend it as an aperitif or a moderate alcoholic companion during the meals.
